Strawberry & Cucumber Salad with Hazelnuts

Ingredients
- 1/4 cup fresh lemon juice 2 lemons
- 1 tablespoon brown sugar
- 1/2 teaspoon sea salt
- 3/4 cup olive oil
- 4 cups packed salad greens of your choice (I used micro-greens), washed and patted dry
- 1 cup strawberries hulled and cut into a 1/4-inch dice
- 1 cup cucumbers deseeded and cut into 1/4-inch half-moon slices
- 1/2 cup hazelnuts coarsely crushed
- 1/4 cup slivered pistachios
Instructions
Make the vinaigrette:
- In a jar, add lemon juice, brown sugar, and sea salt. With lid on, shake well until sugar and salt have dissolved. Add oil, and shake until the dressing is well blended.
Make the salad:
- Wash and pat greens completely dry. Arrange the greens on a large serving platter.
- Top with cucumbers and strawberries. Sprinkle with hazelnuts and pistachios.
- Drizzle vinaigrette on top. Serve immediately.
