Chilli Cheese Toast

Ingredients
Toast
- 4 slices bread not fancy, get the non-fancy kind!
- 3 Tbsp butter room temp
- ¼ tsp crushed red chillies
- 2 spring onions thinly sliced (white and light green parts only)
- 2 green chillies finely minced
- 2 Tbsp cilantro finely chopped
- ¾ cup grated cheese of your choice not fancy, get the non-fancy pre-grated kind you find in the grocery store! I used cheddar and mozzarella
- 1 Tbsp Kewpie mayonnaise
Kewpie mayonnaise harissa:
- 3 Tbsp Kewpie mayonnaise
- 1 red chilli deseeded and thinly sliced, optional
- Sea salt to taste
- 1 Tbsp harissa
Instructions
Toast
- Toast your bread in a pan on both sides, till golden.
- In a small bowl, combine butter with salt and crushed red chillies. Smear on one side of toast and set aside.
- In a medium bowl, combine spring onions, chillies, cilantro, grated cheese and 1 Tbsp. Kewpie mayo. Mix to combine.
- Spread cheese mixture on each slice of bread.
- Place under the broiler. Place toast on a baking tray and broil 4-5 minutes, till cheese is melted and bubbly
- Take it out of the oven, cut into half, diagonally and enjoy with Kewpie mayonnaise harissa!
Kewpie mayonnaise harissa:
- Whisk 2 Tbsp Kewpie mayo with salt, red chilli and 1 Tbsp harissa.
