Strawberry Summer Salad
Ingredients
- ½ a small red onion 50g thinly sliced
- 2 Tbsp / 30 mL white vinegar
- 1 pint / 2 cups / 300g California strawberries hulled, and halved
- 1 cup / 120g cucumber finely diced (~½ of a large English cucumber)
- 4 cups / 60g arugula
- 1 cup / 100g feta cheese crumbled
- ¼ cup / 30g pistachios slivered
Vinaigrette:
- 3 Tbsp / 45 mL lemon juice 1 lemon
- 2 Tbsp / 30 mL maple syrup
- ½ tsp / 3g Aleppo pepper or use black pepper
- ½ cup / 120 mL olive oil
Instructions
Preparation:
- First, quick-pickle onions: slice red onion thinly, place in a shallow bowl, and cover with white vinegar. Let sit for at least 15 minutes, while you prepare the rest of the ingredients.
Prepare vinaigrette:
- Whisk all vinaigrette ingredients in a small jar, secure with a tight-fitting lid, and shake till emulsified.
Assemble salad:
- Place arugula evenly on a large platter. Scatter halved strawberries, diced cucumbers, feta, pickled onions, and pistachios on top.
- Drizzle, to taste, with vinaigrette.
