1pint/ 2 cups / 300g California strawberrieshulled, and halved
1cup/ 120g cucumberfinely diced (~½ of a large English cucumber)
4cups/ 60g arugula
1cup/ 100g feta cheesecrumbled
¼cup/ 30g pistachiosslivered
Vinaigrette:
3Tbsp/ 45 mL lemon juice1 lemon
2Tbsp/ 30 mL maple syrup
½tsp/ 3g Aleppo pepperor use black pepper
½cup/ 120 mL olive oil
Instructions
Preparation:
First, quick-pickle onions: slice red onion thinly, place in a shallow bowl, and cover with white vinegar. Let sit for at least 15 minutes, while you prepare the rest of the ingredients.
Prepare vinaigrette:
Whisk all vinaigrette ingredients in a small jar, secure with a tight-fitting lid, and shake till emulsified.
Assemble salad:
Place arugula evenly on a large platter. Scatter halved strawberries, diced cucumbers, feta, pickled onions, and pistachios on top.
