Herbed Chicken Kebab

Ingredients
- 1 lb ground chicken
- 1 tsp sea salt
- 1 tsp cayenne pepper
- 1 egg
- ½ cup fresh breadcrumbs
- ¼ cup red onion finely diced
- ¼ cup cilantro coarsely chopped
- ¼ cup dill coarsely chopped
- ¼ cup chives coarsely chopped
- Vegetable oil for shallow frying
Instructions
- Gently mix together all the ingredients except the oil.
- Heat ½-inch of oil in a large skillet over medium-high heat.
- Working in batches, add kebabs (patties) and fry for 60-90 seconds per side or until golden brown and cooked through, adding more oil as needed (you may need to change the oil as it darkens).
